Here are two soups that I've been making. One is a variation of my Dutch Grandmother's (or Oma's) dutch soup that she used to make:
Chicken Noodle, Chicken Vegetable, or Chicken Rice Soup
Ingredients:
A small handful of rice or pasta (both are completely optional)
Celery (This is essential to good chicken soup)
1 Chicken Breast
Half an onion (chopped)
Two other vegetables
- chopped carrots
- finely chopped broccoli florets
- diced potato
Salt, pepper
Start a pot of water to boil and add some salt
Throw in the vegetables
Finely chop the vegetables that take longer to cook and throw them in first
The pot should be half water, half veggies
keep boiling until the tougher vegetables are soft
Cook a chicken breast in a pan until just cooked - no need to brown it
Cool it on a plate in the fridge and then cut it into small pieces for the soup
With soup simmering, toss in the chicken pieces and simmer for another 10 minutes
add pepper to taste
To turn this into a dutch soup, use the rice, and then add some tiny meatballs - paper-towelled to remove excess grease. Also add some chopped Maggi plant. I'm not sure where you can get Maggi plant. I got mine from my Mom's flowerbed. It is essential to Dutch soup. I do not recommend the Maggi brand liquid additive that you can buy at the grocery store, as I think it may have MSG in it.
Try this out on a cold day. Also good if you have the flu or something.
